Automated burrata production
The production process begins with the positioning of the stretched curd casing on the appropriate slots on a conveyor belt. This step can be performed manually by the operator or automatically by the robot.
The belt then advances to the filling station. Here, a patented Marotta system lifts the casing and fills it through a nozzle. The filling can be customized to the customer’s discretion: you can opt for traditional stracciatella or more gourmet fillings, such as pesto, olives, and other ingredients.
After filling, the same patented system seals the burrata, which is then placed back on the belt. The final step is to place the finished burrata in a tub or trolley for firming.
An important plus in using MEVO FAST is that it reduces the risk of contamination as the product is not filled manually. In particular, in the case of producing burrata with the head, there is no need to use raffia or similar systems.
Another important plus is that of making the product homogeneous, maintaining the traditional shape and a finished weight as desired.
