The MEVO 12 is Marotta’s plant for dairies producing burrata on an industrial scale: 12 synchronised lines, up to 4,800 burrata per hour with a single operator. It is the most productive machine in the MEVO range and Marotta Evolution’s new release for 2026.
Industrial capacity, one operator
The 12 lines work in parallel and produce every burrata with consistent weight, shape and closure. In an 8-hour shift the MEVO 12 reaches 38,400 burrata: volumes for large-scale retail and export, without adding staff to the production floor and without depending on the experience of a master cheesemaker, an increasingly hard role to fill.
Hygiene: closed process, CIP cleaning
The MEVO 12 is a closed system, fully sanitisable with CIP and with automatic washing. Filling is automatic: the stracciatella, the most delicate part of the burrata, never passes through the operator’s hands. Fewer manual steps mean a lower risk of contamination and a more stable shelf life.
From forming to cup, with AMC Packaging Solutions
With AMC Packaging Solutions, the line is completed by packaging the burrata directly in heat-sealed cups. The product moves from the machine to the pack with no intermediate handling, in a continuous, controlled process.
A supply chain kept inside the Group
Like every Marotta Evolution machine, the MEVO 12 is made entirely within the Group: design, machining, assembly, software and testing. For the dairy, this means a single point of contact, from plant configuration to technical support.
